PUMPKIN BREAD
INGREDIENTS:
1 Can Pumpkin
1 Cup Sugar
3 Eggs
1 Cup Oil
3 Cups Flour
1/2 tsp. Salt
1/2 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Cinnamon
1 tsp. Nutmeg
1 tsp. Ground Cloves
1 Cup Pecans (chopped)
1 Cup Raisins
3 Empty 1-Pound Coffee Cans
DIRECTIONS:
Mix together pumpkin, sugar, eggs, and oil.
Sift flour and spices and fold into liquid mix.
Add nuts and raisins.
Mix all ingredients together.
Grease and flour three 1-pound coffee cans.
Divide ingredients by three and fill coffee cans.
Fill each can 2/3-3/4 full. It rises to top in oven.
Preheat oven to 350 degrees.
Bake 20 minutes.
Turn oven down to 325 degrees.
Bake an additional 1 hour and 10 minutes.
Remove from coffee cans instantly.
They should come out easily.
Cool overnight and wrap in foil.
