QUESADILLAS
INGREDIENTS:
4-oz. Ground Sausage
2 Cloves Garlic, Minced
1 tsp. Chili Powder
19-oz. Can Black Beans, Drained
6 Tbs. Prepared Salsa or Picante Sauce
8 7-inch Flour Tortillas
1-1/2 Cups Pepper-Jack Cheese, Shredded
DIRECTIONS:
Pre-heat oven to 400-F degrees and lightly grease a baking sheet;
set aside.
Brown the sausage with the minced garlic and chili powder in a
heavy skillet over medium-high heat until the meat is cooked through,
about 3 to 5 minutes.
Combine the seasoned sausage with the black beans and salsa in the
skillet, but do not return the pan to the stove top.
Place the tortillas on the prepared baking sheet and divide the
black beans and sausage equally among the flat bread.
Spread the pepper-jack cheese over each tortilla and fold it in half.
Bake for 5 or 6 minutes or until the cheese is melted.
Cut each tortilla in half to serve, with additional salsa or
picante sauce on the side.
Serves 4.
